Vegan Tofu and Oat Gnocchi
Homemade gnocchi that's very high in protein, gluten-free, dairy-free, egg-free and fully vegan - made from firm tofu and oats, served in a tomato and garlic sauce.

Ingredients
For the gnocchi
- 1 package firm tofu (300g)
- 2 cups gluten-free oats
- Salt, pepper and seasonings to taste (I used only salt and pepper)
For the sauce
- Olive oil, for frying
- 4 garlic cloves
- Coarsely chopped tomatoes
- Salt and pepper to taste
- Fresh basil
Instructions
- 1Add the tofu and oats to a blender and blend until you get a slightly sticky dough.
- 2Lay out parchment paper and place the dough on it. If needed, add more oat flour (grinding oats in a spice grinder makes excellent flour).
- 3Roll the dough into ropes and cut with a knife into the gnocchi size you like.
- 4Bring a pot of water to a boil. Once boiling, drop in the gnocchi for a short cook - when the gnocchi float, they're ready.
- 5For the sauce: lightly fry 4 garlic cloves in olive oil, add the coarsely chopped tomatoes and season with salt and pepper.
- 6Toss the gnocchi in the sauce so they absorb the flavors, and at the end of cooking add fresh basil.
