Vegan Soy Shawarma in Lafa

Homemade lafa bread from legume flour with soy chunk shawarma, tahini and vegetables. Gluten-free, dairy-free, egg-free and very high in protein.

Ingredients

For the lafa

  • 1 cup legume flour (red lentil flour / pea flour / green buckwheat flour)
  • 1 tablespoon chia seeds
  • 1 cup water
  • Salt and pepper to taste
  • A little olive oil for frying

For the soy shawarma

  • Dried soy chunks
  • 1 large onion
  • Olive oil
  • Spices to taste

To serve

  • Tahini
  • Lettuce
  • Tomatoes
  • Pickled cucumber

Instructions

  1. 1Mix the legume flour, chia seeds, water and spices until you get a smooth batter.
  2. 2Heat a pan or crepe pan and add a little olive oil.
  3. 3Pour a thin layer of the batter in the size of lafa you want and fry about two minutes on each side until the lafa is ready.
  4. 4To make the shawarma: soak the dried soy chunks in a bowl with warm water for ten minutes.
  5. 5Meanwhile, fry a large onion in olive oil with spices to taste.
  6. 6Add the drained soy chunks to the onion and spices and mix until fully combined.
  7. 7Spread tahini on the lafa, add lettuce, tomatoes, pickled cucumber and the soy shawarma.
  8. 8Roll up the lafa and serve.

So here's an idea: shawarma in a lafa after a good strength workout, very high in protein and of course vegan. I made my shawarma from soy chunks and the lafa comes out magnificent. Roll it into the lafa and enjoy!
