Vegan Tofu Schnitzel

A healthy lunch schnitzel that is gluten-free, egg-free, very high in protein, and of course vegan. Instead of chicken breast you work with firm tofu and oats to get crispy, tasty schnitzels.

Ingredients

  • 600 g firm tofu
  • 1 cup gluten-free oats
  • Spices to taste: salt, black pepper, smoked paprika, nutritional yeast, and a little cumin
  • Gluten-free breadcrumbs for coating
  • A little olive oil for frying

Instructions

  1. 1Blend all the ingredients together in a blender until you get a slightly sticky dough.
  2. 2With wet hands, shape the schnitzels to your preferred size.
  3. 3Dip the schnitzels in gluten-free breadcrumbs.
  4. 4Heat a little olive oil in a pan and fry the schnitzels, or arrange them on a baking tray and bake until golden.

How about schnitzel for lunch? No gluten, no chicken breast, no eggs, very high in protein, and of course vegan. Enjoy, bon appetit!
