Vegan Gluten-Free Protein Granola Bars
Homemade granola bars with 10 grams of protein per piece, built on banana, dates and nuts. Gluten-free and vegan, baked and sliced into rectangles.

Ingredients
- 1 banana
- 1/2 cup applesauce
- 4 Medjool dates, soaked in boiling water and chopped into small pieces
- 60 g nuts (walnuts, cashews, sunflower seeds and pumpkin seeds), roughly chopped
- 3 tablespoons chia seeds
- 45 g shredded coconut
- 1/2 cup raisin and cranberry mix
- 1 heaping tablespoon cocoa
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2In a bowl, combine all the ingredients and mix into one sticky dough.
- 3Grease a baking pan with coconut oil.
- 4Transfer the batter to the pan, press it down, spread and flatten it evenly.
- 5Bake for 20-30 minutes.
- 6Once done, let it cool, then cut in half and into rectangles and serve.
