Vegan Gluten-Free Protein Granola Bars

Homemade granola bars with 10 grams of protein per piece, built on banana, dates and nuts. Gluten-free and vegan, baked and sliced into rectangles.

Ingredients

  • 1 banana
  • 1/2 cup applesauce
  • 4 Medjool dates, soaked in boiling water and chopped into small pieces
  • 60 g nuts (walnuts, cashews, sunflower seeds and pumpkin seeds), roughly chopped
  • 3 tablespoons chia seeds
  • 45 g shredded coconut
  • 1/2 cup raisin and cranberry mix
  • 1 heaping tablespoon cocoa

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2In a bowl, combine all the ingredients and mix into one sticky dough.
  3. 3Grease a baking pan with coconut oil.
  4. 4Transfer the batter to the pan, press it down, spread and flatten it evenly.
  5. 5Bake for 20-30 minutes.
  6. 6Once done, let it cool, then cut in half and into rectangles and serve.
