Green Buckwheat Crackers

Crisp crackers made from green buckwheat. Two minutes of work and you have a tasty, indulgent snack. Egg-free, gluten-free, dairy-free, and high in protein.

Ingredients

  • 3 cups green buckwheat, soaked for at least 2 hours and cooked until soft and ready
  • 6 tablespoons olive oil
  • Seasoning to taste (I used pink Himalayan salt and a little black pepper)
  • Up to 1/4 cup water (as needed)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Blend all the ingredients in a strong blender until you get a smooth, slightly sticky texture. If needed, add up to 1/4 cup of water while blending.
  3. 3Line a baking tray with parchment paper and shape the crackers as you like. I used a ring to get a round cracker.
  4. 4Bake in the oven for about 20 minutes.
  5. 5When the crackers are ready, let them cool and set, and enjoy.
