Protein Ice Cream Popsicles with Berry Coating
Homemade popsicles from cashews, protein yogurt and dates, dipped in a frozen berry coating. A sweet, wholesome treat after a strength workout.

Ingredients
For the ice cream
- 1 cup natural cashews, soaked for at least 2 hours
- Protein yogurt (I used a soy-based vegan protein yogurt)
- 5 medium dates, pitted
For the coating
- 3 cups frozen mixed berries
- 1 banana
- 2 tablespoons 100% pure maple syrup
- 2 tablespoons chia seeds
Instructions
- 1Add the cashews, protein yogurt and dates to a powerful blender and blend until smooth and uniform.
- 2Pour the mixture into popsicle molds and freeze for at least 2 hours.
- 3Meanwhile, make the coating: blend the frozen berries, banana, maple syrup and chia seeds until you get a smooth mixture.
- 4Once the popsicles are set, dip them in the berry coating and return them to the freezer until the coating firms up.
