Baked Sufganiyot

Baked (not fried) Hanukkah doughnuts, protein-rich, gluten-free, dairy-free, and egg-free.

Ingredients

  • 2 cups green buckwheat flour
  • 2 tbsp gluten-free psyllium
  • 2-3 tbsp 100% natural date syrup
  • 1 cup natural applesauce
  • 1 cup milk
  • 1 tsp aluminum-free baking powder

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Mix all the ingredients together in a bowl.
  3. 3Form balls (a round cavity pan gives a nice shape) and bake for about 25-30 minutes.
  4. 4Cool and decorate to taste (e.g. dark chocolate and coconut, chocolate and ground cashews, or almond butter).

My kids said my doughnuts look like cupcakes. What matters to me is that they're not fried, gluten-free, dairy-free, egg-free, and rich in protein. I decorated some with dark chocolate and coconut, some with chocolate and ground cashews, and some with almond butter. Happy holiday and enjoy.
