Apple Strudel
An indulgent-yet-healthy apple strudel, vegan and protein-rich, gluten-free, dairy-free, and egg-free.

Ingredients
For the dough
- 2 cups green buckwheat flour
- ¾ cup almond flour
- 1 cup soy milk
- 2 tsp natural maple syrup
- 2 tbsp coconut oil
- 2 tbsp psyllium (essential)
For the filling
- 5 apples, diced
- 1 tbsp cinnamon
- 2 tbsp natural maple syrup
- 1 tbsp coconut oil
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Mix all the dough ingredients into a uniform dough and let it rest for about 10 minutes.
- 3Meanwhile make the filling in a pan: coconut oil, apples, cinnamon, and maple until the apples soften.
- 4Cool slightly, roll out the dough, fill, and roll up.
- 5Place in a pan and bake for about 25 minutes.
