Vegan Red Lentil Flour Rolls

Protein-packed rolls made from red lentil flour, gluten-free, dairy-free and egg-free. Soft inside and topped with za'atar and sesame.

Ingredients

  • 1 1/4 cups red lentil flour
  • 2 tablespoons olive oil
  • 1 tablespoon aluminum-free baking powder
  • 3 tablespoons yogurt (I used vegan yogurt)
  • 2 tablespoons psyllium
  • 1/2 cup unsweetened soy milk
  • Salt
  • Pepper
  • Za'atar and sesame for topping

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2In a bowl, mix all the ingredients into a smooth batter. Cover and let it rest for 10 minutes on the side to firm up.
  3. 3Shape the batter into rolls in whatever form you like.
  4. 4Sprinkle whatever you fancy over the rolls. I used za'atar and sesame.
  5. 5Bake for 20-25 minutes at 180°C (350°F) until the rolls turn golden.
