Toaster Flatbread

A high-protein, gluten-free flatbread you just mix and pop in the toaster. Ready in a few minutes when you're hungry and out of energy.

Ingredients

  • 2 tablespoons red lentil flour or pea flour
  • 1 tablespoon chickpea flour
  • 1 heaping tablespoon tahini (I use full Ethiopian tahini)
  • About 1/3 cup water
  • Salt
  • Pepper

Instructions

  1. 1In a small bowl, mix all the ingredients until you get a texture like tahini.
  2. 2Line the toaster oven with parchment paper.
  3. 3Pour the batter onto the parchment and bake in the toaster oven for about 10 minutes (depending on your toaster's strength).
  4. 4Spread whatever you like on the bread and serve.

When I get back from my morning workout starving and find out the protein rolls are gone, I have a trick that saves me every time: flatbread in the toaster. A meal that feels like real effort with the energy of "I have no strength but I'm hungry." Enjoy ❤️
