Vegan Quinoa and Flaxseed Rolls
Incredible rolls in two seconds of work, high in protein, gluten-free, dairy-free, egg-free and completely vegan.

Ingredients
- 2 cups quinoa (soaked in water overnight)
- 1/3 cup flax seeds (soaked in water overnight)
- 1/3 cup chia seeds (soaked in water overnight)
- 1/2 cup olive oil
- Salt
- 2-3 tablespoons psyllium
- 1/2 cup water
Instructions
- 1Soak 2 cups of quinoa in water overnight.
- 2In a separate bowl, place 1/3 cup flax seeds and 1/3 cup chia seeds, cover with water and soak overnight.
- 3Preheat the oven to 200°C (400°F).
- 4Transfer the rinsed quinoa to a blender.
- 5Add the flax seeds and chia seeds along with their soaking water, half a cup of olive oil, salt, 2-3 tablespoons of psyllium and half a cup of water. The psyllium is essential to the recipe, it replaces the role of gluten and binds the rolls so they don't crumble.
- 6Blend for 4-5 minutes until a relatively smooth batter forms.
- 7Shape the rolls however you like. I love finger rolls.
- 8Bake in the oven at 180°C (350°F) for 20-25 minutes.
