Vegan Green Buckwheat Bread
A green buckwheat bread that is gluten-free, dairy-free and egg-free, very rich in protein, iron, zinc and dietary fiber. Fully vegan and simple to make.

Ingredients
- 4 cups green buckwheat, soaked for at least 2 hours
- 2 cups water
- 1 tsp salt
- 1 tsp 100% natural silan (date syrup)
- 1 tsp aluminum-free baking powder
- Za'atar for sprinkling (optional)
- Sunflower seeds for sprinkling (optional)
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Blend all the ingredients in a blender until you get a slightly runny batter, very much not doughy.
- 3Pour the batter into a baking pan and sprinkle za'atar and sunflower seeds on top.
- 4Lower the oven and bake at 180°C (350°F) for 25-30 minutes.
