Vegan Cashew Chocolate Popsicles

Creamy chocolate popsicles built on cashews and coconut cream, high in protein and dipped in dark chocolate. Gluten-free, dairy-free, and egg-free.

Ingredients

For the popsicles

  • 1 cup cashews, soaked at least 2 hours in lukewarm water
  • 1 cup coconut cream
  • 2 tablespoons cocoa
  • 1/4 cup 100% natural maple syrup
  • 1/2 cup water

For the coating

  • 1 bar dark chocolate
  • 3 tablespoons coconut oil

Instructions

  1. 1Blend all the popsicle ingredients together until you get a smooth, chocolatey texture.
  2. 2Pour the mixture into a popsicle mold. The amount makes four popsicles.
  3. 3Freeze for at least three hours until the popsicles set.
  4. 4For the coating: melt the dark chocolate with the coconut oil in the microwave for about a minute and a half, until fully melted.
  5. 5Dip each popsicle in the melted chocolate and return to the freezer until the coating hardens.

This time, here is a choco-choco ice cream: vegan, high in protein, and ridiculously tasty. I used a popsicle mold I bought at the supermarket. Enjoy!
