Three-Ingredient Chickpea Flour Burekas

A burekas dough made from just three ingredients: chia seeds, water and chickpea flour. Gluten-free, egg-free, dairy-free, high in protein and vegan, with a sauteed vegetable filling.

Ingredients

For the dough

  • 3 tablespoons chia seeds
  • 3/4 cup water
  • 1-1.5 cups chickpea flour
  • Salt and pepper to taste

For the filling

  • Onion
  • Zucchini
  • Mushrooms
  • Salt, pepper and turmeric for seasoning

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Grind the chia seeds into a powder in a spice grinder.
  3. 3Add 3/4 cup water and keep grinding until you get a jelly-like texture.
  4. 4Transfer to a bowl and add one cup of chickpea flour.
  5. 5Knead until you have a smooth, non-sticky dough. If the dough is sticky, add more chickpea flour (I added another half cup, for a total of one and a half cups).
  6. 6Roll out the dough and cut out circles.
  7. 7Saute onion, zucchini and mushrooms for the filling and season with salt, pepper and turmeric.
  8. 8Fill each circle, fold into a half-moon and place on a baking tray.
  9. 9Lower the temperature to 180°C (350°F) and bake for about 20-25 minutes.
