Three-Ingredient Chickpea Flour Burekas
A burekas dough made from just three ingredients: chia seeds, water and chickpea flour. Gluten-free, egg-free, dairy-free, high in protein and vegan, with a sauteed vegetable filling.

Ingredients
For the dough
- 3 tablespoons chia seeds
- 3/4 cup water
- 1-1.5 cups chickpea flour
- Salt and pepper to taste
For the filling
- Onion
- Zucchini
- Mushrooms
- Salt, pepper and turmeric for seasoning
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Grind the chia seeds into a powder in a spice grinder.
- 3Add 3/4 cup water and keep grinding until you get a jelly-like texture.
- 4Transfer to a bowl and add one cup of chickpea flour.
- 5Knead until you have a smooth, non-sticky dough. If the dough is sticky, add more chickpea flour (I added another half cup, for a total of one and a half cups).
- 6Roll out the dough and cut out circles.
- 7Saute onion, zucchini and mushrooms for the filling and season with salt, pepper and turmeric.
- 8Fill each circle, fold into a half-moon and place on a baking tray.
- 9Lower the temperature to 180°C (350°F) and bake for about 20-25 minutes.
