Vegan Chocolate Protein Muffins
Chocolate muffins rich in protein, gluten-free, dairy-free and egg-free. A simple one-bowl recipe that hits the spot right after a workout.

Ingredients
- 1 cup protein powder of your choice (I used almond protein)
- Protein yogurt
- 1/2 cup milk (I used soy milk)
- 1 tablespoon 100% natural maple syrup
- 2 tablespoons quality cocoa
- 2 heaping tablespoons 100% natural applesauce
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Mix all the ingredients in a bowl until you get a smooth batter.
- 3Pour into a muffin tin (you can also use a loaf pan) and bake for 20-25 minutes.
- 4Let cool and decide whether to coat with chocolate. I coated mine with dark chocolate (at least 70% cocoa solids) and sprinkled coconut on top for fun.
