Quinoa and Green Lentil Rolls for Passover
Passover-friendly rolls made from quinoa and green lentils. Gluten-free, vegan and high in protein, with no eggs and no dairy.

Ingredients
- 1 1/2 cups quinoa
- 1 1/2 cups green lentils
- 1 1/2 cups water
- 3 tablespoons psyllium (essential, the rolls cannot be made without it)
- Juice of 1 lemon
- 4 tablespoons olive oil
- A little salt
Instructions
- 1Soak the quinoa and green lentils in water for at least 2 hours and up to overnight.
- 2Preheat the oven to 200°C (390°F).
- 3Rinse the quinoa and green lentils well.
- 4Add all the ingredients to a blender and blend until you get a smooth, slightly sticky dough.
- 5With wet hands, shape into whatever form you like - rolls, a festive holiday challah, or any shape you want.
- 6Lower the oven to 180°C (350°F) and bake the rolls for about 25 minutes.
