Quinoa and Green Lentil Rolls for Passover

Passover-friendly rolls made from quinoa and green lentils. Gluten-free, vegan and high in protein, with no eggs and no dairy.

Ingredients

  • 1 1/2 cups quinoa
  • 1 1/2 cups green lentils
  • 1 1/2 cups water
  • 3 tablespoons psyllium (essential, the rolls cannot be made without it)
  • Juice of 1 lemon
  • 4 tablespoons olive oil
  • A little salt

Instructions

  1. 1Soak the quinoa and green lentils in water for at least 2 hours and up to overnight.
  2. 2Preheat the oven to 200°C (390°F).
  3. 3Rinse the quinoa and green lentils well.
  4. 4Add all the ingredients to a blender and blend until you get a smooth, slightly sticky dough.
  5. 5With wet hands, shape into whatever form you like - rolls, a festive holiday challah, or any shape you want.
  6. 6Lower the oven to 180°C (350°F) and bake the rolls for about 25 minutes.
