Protein Pea-Flour Buns

Protein-rich buns made from green pea flour and ground pumpkin seeds. Gluten-free, dairy-free, egg-free and fully vegan.

Ingredients

  • 2 cups pea flour
  • 1 cup raw pumpkin seeds, ground in a strong blender into a kind of flour
  • 1 teaspoon aluminum-free baking powder
  • Salt and black pepper
  • 3 heaping tablespoons psyllium (the buns cannot be made without it)
  • 2 cups water

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Place all the ingredients in a bowl and mix until you get a runny batter.
  3. 3Cover and set aside for 10 minutes.
  4. 4Shape into any bun shape you like.
  5. 5Lower the oven to 180°C (350°F) and bake for about 25 minutes.
