Protein Cheesecake
A vegan, protein-rich, low-carb cheesecake baked in a water bath, gluten-free.

Ingredients
- 2 protein yogurts (e.g. vegan soy-based yogurt)
- 2 vegan vanilla yogurts
- 1¼ cups almond flour
- 1 tbsp date sugar
- 8 tbsp applesauce
- coconut oil for greasing the pan
Instructions
- 1Fill a baking tray with tap water.
- 2Preheat the oven to 200°C (390°F).
- 3Mix all the ingredients in a bowl; taste and adjust sweetness (date sugar, lemon zest, or any topping you like).
- 4Grease the cake pan with coconut oil and pour in the batter.
- 5Place the cake pan inside the water-filled tray and lower the heat to 180°C (350°F).
- 6Bake for about 25-30 minutes. Only taste once it has cooled.
