Passover Gluten-Free Challah
A soft braided Passover challah that is gluten-free, dairy-free and egg-free, and very high in protein. Built on cauliflower flour, almond flour and green buckwheat flour.

Servings1 large challah (about 8 slices)
Ingredients
- 1.5 cups cauliflower flour
- 1 cup almond flour
- 1 cup green buckwheat flour
- 1 teaspoon aluminum-free baking powder
- 2 tablespoons psyllium
- 2.5 cups soy milk or water
- Salt and spices to taste
- Soy milk and sesame seeds for brushing and topping
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Mix all the ingredients in a bowl until you get a uniform, non-sticky dough.
- 3Divide the dough into three long ropes and braid them into a challah.
- 4Brush the challah with soy milk and sprinkle with sesame seeds.
- 5Bake for half an hour at 180°C (350°F).
