High-Protein Quinoa Rolls

Quinoa rolls that are high in protein, low in carbs, gluten-free and vegan. The batter is blended smooth and gets its doughy texture from chia and psyllium.

Ingredients

  • 500 g quinoa, soaked for at least 2 hours
  • 1 cup water
  • 1/3 cup olive oil
  • 2 tablespoons baking powder
  • Juice of 1 lemon
  • 3 tablespoons chia seeds + 3-4 tablespoons water
  • 3 tablespoons psyllium

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2In a small bowl, combine 3 tablespoons chia seeds with 3-4 tablespoons water and set aside to rest.
  3. 3Add all the ingredients, except the psyllium, to a blender and blend until you get a smooth batter.
  4. 4Add 3 tablespoons psyllium and keep mixing until you get a doughy texture.
  5. 5With wet hands, shape the rolls and bake at 180°C (350°F) for about half an hour.
