Green Lentil Rolls
Soft, tasty rolls made from green lentils. Gluten-free, vegan, and rich in protein, fiber, calcium, potassium, and iron.

Ingredients
- 3 cups green lentils, soaked in water for at least 2 hours up to overnight
- 2 cups water
- 8 tablespoons psyllium
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- A little salt
Instructions
- 1Add all the ingredients to a strong blender and blend until you get a firm dough.
- 2Preheat the oven to 200°C (390°F).
- 3Thanks to the psyllium you can shape the rolls however you like. Form the rolls. This amount made me 7 medium rolls.
- 4Lower the oven to 180°C (350°F) and bake the rolls for about 20 minutes.
