Green Buckwheat Pita with Baked Falafel

Homemade green buckwheat pitas with oven-baked falafel, low in carbs and high in protein. Ten minutes of work and the oven does the rest.

Ingredients

For the pitas

  • 300 g green buckwheat (soak at least 2 hours and rinse very well)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp apple cider vinegar
  • ¾ cup water

For the falafel

  • 500 g chickpeas (soak at least 2 hours)
  • 1 bunch parsley
  • 1 bunch cilantro
  • 3 garlic cloves
  • 1 onion
  • 2 tsp baking soda
  • Spices to taste, and don't forget cumin

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2Add all the pita ingredients to a strong blender and blend until you get a batter with a pancake-like texture.
  3. 3Shape the batter into 5 pitas on a parchment-lined tray and bake for about 20 minutes.
  4. 4For the falafel: blend all the ingredients in a strong blender.
  5. 5Line a tray with parchment paper and form the mixture into falafel balls.
  6. 6Bake for about 20-30 minutes until golden.
