Chickpea Protein Rolls
Rolls made from chickpeas that are very high in protein, gluten-free, dairy-free and egg-free, vegan and delicious.

Ingredients
- 2.5 cups chickpeas, after soaking for at least 2 hours (overnight soaking recommended)
- 2 cups water
- Salt, pepper and any spices you like (I used only salt and pepper)
- 4 tablespoons olive oil
- 1 teaspoon aluminum-free baking powder
- 2 tablespoons psyllium (you can't make these without it!)
- 2 tablespoons apple cider vinegar
- Za'atar and sesame for sprinkling (optional)
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Blend all the ingredients together in a blender.
- 3With wet hands, shape the rolls into any form you like, and you don't need a roll pan.
- 4Sprinkle whatever topping you like over the rolls; I sprinkled za'atar and sesame.
- 5Bake for 20-25 minutes at 180°C (350°F).
- 6Store the rolls refrigerated, and preferably frozen.
