Chickpea Protein Rolls

Rolls made from chickpeas that are very high in protein, gluten-free, dairy-free and egg-free, vegan and delicious.

Ingredients

  • 2.5 cups chickpeas, after soaking for at least 2 hours (overnight soaking recommended)
  • 2 cups water
  • Salt, pepper and any spices you like (I used only salt and pepper)
  • 4 tablespoons olive oil
  • 1 teaspoon aluminum-free baking powder
  • 2 tablespoons psyllium (you can't make these without it!)
  • 2 tablespoons apple cider vinegar
  • Za'atar and sesame for sprinkling (optional)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Blend all the ingredients together in a blender.
  3. 3With wet hands, shape the rolls into any form you like, and you don't need a roll pan.
  4. 4Sprinkle whatever topping you like over the rolls; I sprinkled za'atar and sesame.
  5. 5Bake for 20-25 minutes at 180°C (350°F).
  6. 6Store the rolls refrigerated, and preferably frozen.
