Black Lentil and Quinoa Rolls
Amazing rolls made from quinoa and black lentils, gluten-free, dairy-free, egg-free, very high in protein and completely vegan.

Ingredients
- 1.5 cups black lentils, soaked for at least 2 hours
- 1.5 cups quinoa, soaked for at least 2 hours
- 3 tablespoons psyllium (the rolls cannot be made without it)
- 2 tablespoons apple cider vinegar
- 1 teaspoon aluminum-free baking powder
- 1.5 cups water
- Spices to taste (I used salt, black pepper and za'atar)
- Sesame seeds for sprinkling on top
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Blend all the ingredients until you get a firm dough that is easy to work with.
- 3Shape the dough into rolls however you like and place them on a baking tray.
- 4Sprinkle on top whatever you love, I sprinkled lots of sesame seeds.
- 5Bake in the oven for 30 minutes.
