Banana Green Buckwheat Bread
A sweet vegan loaf based on green buckwheat flour and ripe bananas, with no added sugar and no gluten. I still haven't decided if it's a bread or a cake, so you decide.

Ingredients
- 2.5 cups green buckwheat flour
- 3-4 ripe bananas (depending on size: 4 small or 3 large)
- 2 teaspoons aluminum-free baking powder
- 3/4 cup milk (I used soy milk)
- 2 tablespoons apple cider vinegar
- 1 teaspoon cinnamon
- 2 tablespoons peanut or nut butter
- 1 teaspoon 100% natural maple syrup
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2In a bowl, mix all the ingredients together until you get a slightly sticky batter.
- 3Transfer to a loaf (English cake) pan and bake for about 20-35 minutes at 180°C (350°F).
