Vegan Soy Protein Bread

A homemade, very high-protein bread that is gluten-free, dairy-free and egg-free, perfect alongside Friday fish or braided as a Shabbat challah.

Ingredients

  • 4 cups soybeans, soaked for at least 2 hours (overnight works too, and is even recommended)
  • 2 and a half cups water
  • 3 tablespoons psyllium
  • Salt to taste
  • Pepper to taste
  • Za'atar to taste
  • 1 teaspoon aluminum-free baking powder
  • 1/3 cup olive oil
  • Sesame seeds for sprinkling on top

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2Place all the ingredients in a blender and blend into a smooth, uniform dough.
  3. 3Line a baking tray with parchment paper.
  4. 4Shape the dough into any bread shape you like, you can also braid it into a challah.
  5. 5Sprinkle sesame seeds on top and bake for 30 to 35 minutes.

When a client told me she absolutely needed a challah next to her Friday fish, I went into the kitchen and made a bread that is gluten-free, dairy-free, egg-free, very very high in protein and of course vegan. Love your body and treat it to good things, enjoy, bon appetit!
