Vegan Protein Chickpea Baguette

A gluten-free, high-protein baguette made from chickpeas. Vegan and incredibly tasty.

Servings1 large baguette or several rolls

Ingredients

  • 4 cups chickpeas, soaked for at least 2 hours
  • 8 tablespoons psyllium
  • 1 heaping tablespoon baking powder
  • 2 tablespoons apple cider vinegar
  • 2 cups water

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Add all the ingredients to a blender and blend until you get a smooth batter.
  3. 3Shape into a baguette or any roll you like and transfer to a baking tray.
  4. 4Lower the oven to 180°C (350°F) and bake for about half an hour.

And this time, here comes a baguette! Gluten-free, high in protein, and vegan. Give me good olive oil, balsamic vinegar, coarse salt and a baguette and I'm at my happiest. Enjoy!
