Vegan Protein Chickpea Baguette
A gluten-free, high-protein baguette made from chickpeas. Vegan and incredibly tasty.

Servings1 large baguette or several rolls
Ingredients
- 4 cups chickpeas, soaked for at least 2 hours
- 8 tablespoons psyllium
- 1 heaping tablespoon baking powder
- 2 tablespoons apple cider vinegar
- 2 cups water
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Add all the ingredients to a blender and blend until you get a smooth batter.
- 3Shape into a baguette or any roll you like and transfer to a baking tray.
- 4Lower the oven to 180°C (350°F) and bake for about half an hour.
