Vegan Chocolate Mousse Cake

A rich vegan chocolate mousse cake on an almond flour crust, gluten-free, dairy-free and egg-free.

Ingredients

For the crust

  • 2 cups almond flour
  • 2 tablespoons coconut oil
  • 2 tablespoons cocoa
  • 1 teaspoon cinnamon
  • 2 tablespoons maple syrup

For the chocolate mousse

  • 400 g coconut cream (prefer 100% coconut cream)
  • 450 g dark chocolate, at least 70% cocoa solids

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Mix all the crust ingredients in a bowl until you get a crumbly dough, place in a baking pan and flatten.
  3. 3Bake for about 15 minutes.
  4. 4Place the coconut cream and chocolate in a bowl and microwave for about a minute and a half.
  5. 5Stir until the coconut and chocolate combine into a mousse.
  6. 6Pour the chocolate mousse over the cooled cake and refrigerate for at least two hours.
  7. 7You get an insane chocolate mousse cake.
