Vegan Chocolate Mousse Cake
A rich vegan chocolate mousse cake on an almond flour crust, gluten-free, dairy-free and egg-free.

Ingredients
For the crust
- 2 cups almond flour
- 2 tablespoons coconut oil
- 2 tablespoons cocoa
- 1 teaspoon cinnamon
- 2 tablespoons maple syrup
For the chocolate mousse
- 400 g coconut cream (prefer 100% coconut cream)
- 450 g dark chocolate, at least 70% cocoa solids
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Mix all the crust ingredients in a bowl until you get a crumbly dough, place in a baking pan and flatten.
- 3Bake for about 15 minutes.
- 4Place the coconut cream and chocolate in a bowl and microwave for about a minute and a half.
- 5Stir until the coconut and chocolate combine into a mousse.
- 6Pour the chocolate mousse over the cooled cake and refrigerate for at least two hours.
- 7You get an insane chocolate mousse cake.
