Vegan Chocolate Cake with Pumpkin Seed Flour

An especially indulgent chocolate cake that is gluten-free, dairy-free and egg-free, very high in protein and genuinely delicious. The flour here is ground pumpkin seeds, and a cup of chocolate chips turns it into a real treat.

Ingredients

  • 1.5 cups pumpkin seeds, ground into flour (grind your own in a home grinder)
  • 1 tsp aluminum-free baking powder
  • 1/4 cup quality cocoa
  • 1/4 cup 100% natural applesauce
  • 1 tbsp coconut oil
  • 1/2 cup soy milk
  • 1/4 cup 100% natural maple syrup
  • 1 cup quality chocolate chips (optional, if you feel like indulging)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Grind the pumpkin seeds into flour in a home grinder.
  3. 3In a bowl, mix all the ingredients together until you get a smooth batter.
  4. 4Transfer to a pan and bake at 180°C (350°F) for about 20 minutes.
