Vegan Chickpea Chocolate Cake

A rich, ridiculously tasty chocolate cake built on chickpeas. Gluten-free, high in protein, iron and dietary fiber, and fully vegan.

Ingredients

  • 2 cups cooked chickpeas
  • 3-4 tablespoons natural peanut butter
  • 3 tablespoons silan (date syrup) or 100% natural maple syrup
  • 2 tablespoons pea protein powder (or any other protein)
  • 2 tablespoons baking powder
  • 100 g dark chocolate, 70% cocoa, roughly chopped

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2Place the chickpeas, peanut butter and maple syrup or silan in a bowl and blend with an immersion blender into a slightly sticky batter.
  3. 3Add the baking powder and chocolate to the batter and mix.
  4. 4Transfer to a pan and bake for 20-25 minutes.
