Three-Flour Bread

A vegan, gluten-free bread made from three flours, low in carbs and rich in protein and fiber, made easily in a blender.

Ingredients

  • 2 cups orange lentil flour
  • 1 cup teff flour
  • 1 cup chickpea flour
  • 2 soft tofu or 4 eggs
  • ½ cup olive oil
  • 1 tbsp baking powder
  • 1 cup plant-based or regular milk
  • 3 tbsp maple syrup
  • 2 tbsp apple cider vinegar
  • 2 tbsp whole tahini

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Blend all the ingredients until you get a smooth batter.
  3. 3Grease a baking pan (raw tahini adds extra nutritional value).
  4. 4Pour the batter into the pan.
  5. 5Lower the oven to 180°C (350°F) and bake for 20-25 minutes.

I'm always looking for that balance between healthy and delicious, and this bread is exactly that for me. Three flours, vegan and gluten-free, low in carbs and rich in protein and fiber. Best part - it's so easy: everything goes into the blender, then straight into the pan and the oven. Enjoy.
