Teff and Green Buckwheat Bread

A wholesome bread made from teff flour and green buckwheat flour. High in protein, iron, calcium and fiber, low in carbs, gluten-free and vegan.

Ingredients

  • 2 cups teff flour
  • 2 cups green buckwheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 cup olive oil
  • 2 1/4 cups water
  • 1/3 cup psyllium

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2In a bowl, mix the water with the psyllium and set aside to thicken.
  3. 3In a separate bowl, combine the teff flour, green buckwheat flour, salt, baking soda and olive oil, and mix everything together.
  4. 4Add the psyllium mixture and knead everything together until you get a smooth, pleasant dough.
  5. 5Transfer to a baking pan and bake in the preheated oven for about 20-25 minutes.
