High-Protein Soybean Rolls

Rolls made from soybeans, gluten-free, dairy-free and egg-free, packed with protein and fully vegan.

Ingredients

  • 3 cups soybeans, soaked for at least 2 hours (preferably overnight)
  • 2 tablespoons olive oil
  • 1 tablespoon aluminum-free baking powder
  • 2 cups water
  • 2 tablespoons psyllium
  • 1 tablespoon apple cider vinegar
  • Salt
  • Pepper
  • Za'atar and sesame seeds for topping (optional)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Blend all the ingredients in a blender into a smooth batter.
  3. 3Cover and let the batter rest for 10 minutes on the side so it sets.
  4. 4Shape the batter into rolls however you like.
  5. 5Top the rolls with whatever you like - I sprinkled on za'atar and sesame seeds.
  6. 6Bake for 30-35 minutes at 180°C (350°F).
