Silken Tofu Protein Pancakes for Kids

Soft, protein-packed pancakes built on silken tofu and protein powder. Gluten-free, dairy-free, and egg-free. Exactly what my kids get when they feel like pancakes.

Ingredients

  • 1 package silken tofu
  • 3 scoops protein powder (I used vanilla soy protein)
  • 1/2 cup green buckwheat flour
  • 1/2 cup applesauce
  • 1 teaspoon aluminum-free baking powder
  • 2-3 tablespoons natural maple syrup
  • 1/2 cup milk (I used unsweetened soy milk)

Instructions

  1. 1Place all the ingredients in a bowl and mix until you get a smooth batter. To get a completely smooth texture, I blended it with an immersion blender.
  2. 2Heat a pan with a little oil and form perfect pancakes.

When my kids feel like pancakes, they get pancakes! Gluten-free, dairy-free, egg-free, very high in protein, and believe it or not, really tasty. Love your body, treat it to good things, enjoy. Bon appetit.
