Red Lentil Flour and Pumpkin Seed Rolls

Wholesome rolls made from red lentil flour and pumpkin seeds. Gluten-free, dairy-free, egg-free, very high in protein, and fully vegan.

Ingredients

  • 3 cups red lentil flour
  • 1 cup pumpkin seeds
  • 3 tablespoons psyllium
  • Salt
  • Pepper
  • 1 teaspoon aluminum-free baking powder
  • 2 tablespoons natural apple cider vinegar
  • 2 cups water

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Grind the pumpkin seeds into flour in a powerful blender.
  3. 3Place all the ingredients in a bowl and mix until you get a relatively sticky dough.
  4. 4Cover and set aside for 10 minutes.
  5. 5Shape into rolls however you like (I made bite-sized rolls) and sprinkle whole pumpkin seeds on top.
  6. 6Bake for 20-25 minutes.

There's nothing like the smell of baking at home, but this time here's the healthy version. Love your body and treat it to good things. Enjoy!
