Quinoa and Oat Bite Rolls

Soft-inside, crisp-outside bite-sized rolls built on quinoa and oat flour. Gluten-free, dairy-free, egg-free, vegan and packed with protein.

Ingredients

  • 1 cup gluten-free oat flour (I ground gluten-free oats into flour)
  • 1 cup quinoa, soaked for at least 2 hours (I used triple quinoa and sprouted it for two days in the fridge)
  • 3 tablespoons gluten-free psyllium
  • 1 teaspoon salt
  • 1 teaspoon aluminum-free baking powder
  • 1½ cups warm water
  • 2 tablespoons apple cider vinegar
  • Sesame seeds and coarse pink Himalayan salt for topping

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Mix all the ingredients until you get a sticky dough, then let it rest for 10 minutes.
  3. 3After 10 minutes, knead until the dough is uniform (it stays a little sticky, don't worry!).
  4. 4Shape into rolls in whatever form you like, mine came out as bite-sized rolls.
  5. 5Sprinkle sesame seeds and coarse pink Himalayan salt on top.
  6. 6Bake for 20-25 minutes until the rolls are golden.
