Gluten-Free Rolled Cookies

Vegan, gluten-free rolled cookies with a chocolate-coconut filling, inspired by childhood.

Ingredients

  • 1 heaping cup applesauce
  • 2 tbsp chia seeds
  • ½ tsp baking powder
  • 1 tbsp coconut oil
  • 2 cups gluten-free oat flour (ground at home)
  • 1 tsp date sugar
  • 1 heaping tbsp tahini
  • Filling: coconut oil, cocoa, and coconut

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2In a bowl, mix the applesauce and chia seeds and let rest for about 10 minutes.
  3. 3Add the rest of the ingredients until a sticky dough forms.
  4. 4Chill the dough in the fridge for about 20 minutes.
  5. 5Roll out the dough between two sheets of parchment paper.
  6. 6Spread the filling (coconut oil, cocoa, and coconut) over the dough.
  7. 7Roll the dough into a log and bake until the cookies are golden.

Last Saturday family came to visit and we got into childhood memories of my mom's rolled cookies. That sent me straight to the kitchen. They came out with exactly that same nostalgic taste, only this time gluten-free, vegan, and rich in protein. I filled them with chocolate and coconut, just the way I loved most as a kid. Enjoy.
