Chickpea Flour Chocolate Chip Cookies

Healthy chocolate chip cookies made from chickpea flour, gluten-free, egg-free, dairy-free and free of processed sugar, with plenty of protein.

Ingredients

  • 1 1/2 cups chickpea flour
  • 1/4 cup 100% natural maple syrup
  • 1 tablespoon aluminum-free baking powder
  • 1/3 cup applesauce
  • 1 tablespoon melted coconut oil
  • 1 cup good-quality chocolate chips, at least 60%-70% dark chocolate

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Place all the ingredients in a bowl and mix until you get a slightly sticky dough.
  3. 3Using two wet spoons, place the cookies on a baking tray and flatten them.
  4. 4Bake for 25 minutes at 180°C (350°F).
  5. 5Once the cookies are ready, let them cool until they firm up.
