September 1st brought me right back to the feeling of morning rolls, getting organized and back to school. Happy to say I'm done with the school years, but not with the craving for rolls, so I made us chickpea flour and whole tahini rolls: protein-rich, tasty, soft, indulgent and comforting. Enjoy ❤️

Chickpea Flour and Whole Tahini Rolls
Soft, protein-rich and comforting rolls made from chickpea flour and whole tahini, seasoned with za'atar.

Ingredients
- 1 cup chickpea flour
- 1/4 cup whole tahini
- 1 tbsp yeast
- 1/2 tsp salt
- 2 tbsp za'atar
- 1 tbsp apple cider vinegar
- 1/3 cup milk of your choice
- 2 tbsp silan (date syrup) or maple syrup
- 2 tbsp ground flaxseed
- 3 tbsp chia seeds + a little water
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Place the chia seeds in a small bowl with a little water and let them rest.
- 3Grind the flaxseeds into a powder.
- 4Put all the remaining ingredients in a blender and process until a dough forms.
- 5Once the dough is ready, fold the soaked chia seeds and ground flaxseed into the batter.
- 6Spoon the dough into a roll pan or an English cake (loaf) pan.
- 7Bake for 20 minutes, lowering the heat to 180°C (350°F) during baking.
